Why You Will Love Buffalo Chicken Sandwiches
I made these sandwiches for treat day and the sandwiches were a big hit. The buffalo wing sauce makes the chicken really runny, and everyone thought that it could have been a little bit thicker. Next time, I'm going to try adding some flour or cornstarch to thicken the sauce up a bit. They were calling them buffalo sloppy joes. Ha ha.
The recipe makes a lot. I ended up doubling the recipe and used 6 pounds of boneless chicken, and now I have a lot of buffalo chicken to use up. That's ok though, because I am a buffalo chicken lover freak and I look forward to using up the leftovers. Too bad the husband doesn't like buffalo chicken, he's missing out.
Ingredients Needed for Buffalo Chicken Sandwiches
- Boneless chicken breast - They’re lean and quick-cooking and always come out juicy and tender. Use an instant-read thermometer to make sure that the chicken is not over cooked. When reading labels for chicken breasts try to find ones that say Organic or Free Range.
- Frank's Red Hot Buffalo Wing Sauce is a popular condiment that has been around since 1964. It is made with a blend of aged cayenne peppers, vinegar, garlic, and other natural ingredients, giving it a tangy and slightly spicy flavor.
- Hamburger buns - Use whatever hamburger buns you prefer.
- Roma tomatoes, sliced
- Leaf lettuce, torn
- See the recipe card below for a full list of ingredients and measurements.
How to Make Buffalo Chicken Sandwiches
Step 1: Place chicken breasts in the slow cooker and season the chicken breast with Ranch seasoning mix.

Step 2: Pour the buffalo sauce over the chicken and stir until chicken is coated. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.

Step 3: Once done, shred chicken with two forks and mix well with the sauce in the slow cooker.

Serving Suggestions: Serve on hamburger buns and top with optional toppings, if desired.
Pro Tips for Slow Cooker Buffalo Chicken Sandwiches
- Use boneless, skinless chicken breasts: They work especially well in the slow cooker and are easy to shred once tender.
- Don't overcook the chicken: Start checking it toward the end of the recommended cooking time. Overcooked chicken can become dry.
- Shred while warm: The chicken is easiest to shred with two forks while it's still hot and tender.
- Adjust the buffalo sauce: Use more or less buffalo sauce depending on how spicy you like your sandwiches.
- Toast the buns: Lightly toasting the sandwich buns adds a delicious texture and helps keep them from becoming soggy.
- Let the chicken absorb the sauce: After shredding, stir the chicken back into the slow cooker so every bite is coated in the buffalo sauce.
Serving Suggestions
Serve these Slow Cooker Buffalo Chicken Sandwiches with classic sides like potato wedges, French fries, coleslaw, or a simple green salad. Celery and carrot sticks are also a natural pairing with buffalo chicken.
For an extra creamy contrast to the spicy chicken, top your sandwiches with ranch or blue cheese dressing. You can also add shredded lettuce, sliced tomatoes, or extra cheese.
These sandwiches are perfect for easy weeknight dinners, game-day gatherings, parties, and casual get-togethers.
Storage and Freezing
Store leftover buffalo chicken in an airtight container in the refrigerator for up to 3 to 4 days. Keep the chicken separate from the sandwich buns and toppings until you're ready to serve so the bread doesn't become soggy.
To freeze: Allow the shredded buffalo chicken to cool completely, then place it in a freezer-safe container or zip-top freezer bag. Remove as much air as possible before sealing. Freeze for up to 3 months.

I was never a wing person. When I steratd dating Nor and he still ate meat, we would joke about how there was really no polite way to eat chicken wings. Regardless of how appropriate you’re trying to be, at the end of the day you’re still sucking meat off a bone with sauce all over your face and fingers. There is truly no polite way to do it. Nor was the most gracious wing-eater I’d seen, and to this day he is the only person I’ve ever seen eat a tray of buffalo wings and not be completely smeared with sauce and grease at the end of that ordeal.

There seems to be a problem with this recipe. It serves 8 though you use 6 rolls to divide up the chicken. In my book that's 6 servings. It tells you to add butter and butter is not listed in your ingredients. Also the picture shows it topped with cheese and there is no cheese listed in your ingredients. So it makes me think the points values on this can not be correct. It looks like a great recipe worth trying but not sure I wouldn't want to put this in the recipe builder before attempting it.
Just thought you should know the errors in this recipe listed.

These look really yummy! I've been using my crock pot a LOT the past year to make WW friendly recipes. One secret I've discovered for thickening is instant tapioca (in the red box). It's so easy because you can add it in the beginning, no messing with constarch/flour and water slurries at the end. Since I'm a family of 2, I will need to try this in a smaller batch 🙂
