    Pioneer Woman Sour Cream Noodle Bake

Layers of tender egg noodles, creamy sour cream, rich cottage cheese, seasoned ground beef, and plenty of melted cheddar cheese come together to create a hearty casserole that the whole family will love.

    This sour cream noodle bake recipe is a flavorful weeknight casserole that will make anyone happy. It is ready in about 30 minutes and makes great leftovers for the next day.

    This classic baked pasta dish is easy enough for busy weeknights but cozy enough to serve on a chilly weekend. It is one of those recipes that tastes even better the next day, making it perfect for meal prep or leftovers. Whether you are feeding a crowd or simply want an easy make-ahead dinner, this sour cream noodle bake checks all the boxes.

    Ree has been one of my favorites to follow for a while now and Iโ€™m still watching her. This recipe was shared back in 2014 and her show is still on the air today.  I absolutely love this baked noodle sour cream casserole recipe of hers. Itโ€™s really easy to make this recipe lower in calories as well by substituting a few changes.

    What Ingredients do I need for Sour Cream Noodle Bake?

    • Ground Chuck  - Ground chuck can get expensive so use either ground beef or a flavorful pork sausage. Lean ground beef, ground turkey, or ground chicken can be used to make this lower calorie. 
    • Tomato Sauce  -  When purchasing canned tomatoes, it is important to read the label and choose a product with no added salt or sugar if you are looking for a healthier option.
    • Salt and Black Pepper   - to taste 
    • Egg noodles -  or any spiral type of pasta 
    • Sour Cream  - Regular or light to make lower calorie 
    • Cottage Cheese  -  1% or 2% Can sub Ricotta cheese 
    • Sharp Cheddar - Mild or Extra Sharp, sometimes I will use Colby Jack cheese 
    • Green Onions - for garnish

    How to make Sour Cream Noodle Bake Casseroleย ย 

    Step 1 Preheat the oven to 350 degrees F.


    Step 2 Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, ยฝ teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.

    Step 3 Cook the egg noodles until al dente. Drain and set aside.


    Step 4 In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.

    Step 5 To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.


    How to Serve: Serve with crusty French bread.

    Pro Tips for Sour Cream Noodle Bake

    • Do not overcook the egg noodles since they will continue cooking in the oven.
    • Use freshly shredded cheddar cheese for the best melting texture.
    • Let the casserole rest before slicing to help it set properly.
    • Add mushrooms or diced bell peppers to the meat sauce for extra vegetables.
    • If you prefer a little heat, stir crushed red pepper flakes into the meat sauce.
    • Prepare the casserole a day ahead and refrigerate it until ready to bake.
    • Cover loosely with foil if the cheese begins browning too quickly during baking.

    Storage

    Store leftover sour cream noodle bake in an airtight container in the refrigerator for up to 4 days.

    To reheat, warm individual portions in the microwave until heated through. Larger portions can be reheated in a 350 degree F oven, covered with foil to prevent the casserole from drying out.

    This casserole also freezes very well. Wrap the fully baked casserole tightly with plastic wrap and aluminum foil or transfer portions to freezer-safe containers. Freeze for up to 3 months.

    Thaw overnight in the refrigerator before reheating for the best texture.

    Serving Suggestions

    This hearty casserole pairs well with simple side dishes that balance its rich and creamy flavors.

    Serve it with a crisp green salad tossed in your favorite vinaigrette for a fresh contrast. Or try this Broccoli Salad with Bacon and Raisins

    How to Freeze

    Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.

    Ingredients

    • 8 ounces egg noodles

    • 1 ยผ cups small curd cottage cheese

    • ยฝ cup sliced green onions (less to taste)
    • 1 cup grated sharp Cheddar
    • Crusty French bread, for serving


    Instructions

    8. To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.
    9. Makes 12 servings: Serving size: 1 cup.ย

      Made this today after watching her old shows on Discovery channel. Put them in the Freezer and had one tonight. Whole family liked it and my husband wanted the recipe to cook for the Fire Dept when itโ€™s time to cook. Thanks for sharing. Love The show her products and just her in general!
