    One Pot Lemon Garlic Shrimp Pasta - this will be your new favorite pasta dish and you'll want to add it to your weekly dinner rotation!

    Why You Will Love This Recipe

    This is my favorite new pasta dish and will soon be your favorite too. This dish is made in one pot. You boil the noodles and drain them, then cook everything else in the same pot. Hardly no dirty dishes! Who doesn't love that?

    One pot meals are becoming the thing ya know, kind of like one sheet pan dinners.

    Shrimp is a great source of protein. 1 pound of shrimp has 140 grams of protein in it! That is one reason why this dish is so low in points as well. Plus, there's no sugar added to it. I didn't even mind the spinach! This dish makes about 5 servings for only 316 calories. Use a heaping cup per serving.

    Ingredients Needed

    Ingredients needed for one pot lemon garlic shrimp pasta.
    • linguine noodles, boiled
    • Olive oil - Look for olive oils that are labeled as extra virgin, cold-pressed, and unfiltered for the highest quality.
    • Light butter - I like to use light butter (I Can't Believe it's Not Butter) to help reduce the calories. Feel free to use regular butter.
    • Garlic - Chopped fresh garlic can take some time to chop so I often always use the freshly minced garlic that comes already made in a jar. Red Pepper Flakes - are small pieces of dried hot peppers, typically made from cayenne, that are crushed or ground into small flakes.
    • Large shrimp - the main protein of choice for this dish
    • Salt and pepper to taste
    • Dried Oregano - is a common herb used in cooking, particularly in Mediterranean and Mexican cuisine. It has a pungent, slightly bitter taste and a strong aroma.
    • Spinach
    • Parmesan cheese is a hard, granular cheese that originated in Italy. It is typically made from cow's milk and has a sharp, nutty flavor. Parmesan cheese is often grated and used as a topping for pasta dishes, salads, and other foods.2 Tbsp. parsley, chopped
    • Lemon juice -  Is a citrus juice made from squeezing fresh lemons. It is commonly used as a flavoring agent in cooking, baking, and beverages. Bottled lemon juice is also ok to use.

    How to Make Lemon Garlic Shrimp Pasta

    Step 1: In a large pot, boil water and add pasta. Cook (stirring frequently) until al dente. Drain and set aside pasta.

    Step 2: In the same pan, heat 1 tablespoon of olive oil and 1 tablespoon of butter. Add garlic and crushed red pepper, and cook until fragrant.

    Step 3: Toss in shrimp, salt, and pepper to taste, and stir until shrimp start to turn pink, but are not fully cooked.

    Step 4: Add oregano and spinach, cook until wilted.

    Step 5: Return cooked pasta to the pot, add remaining butter, parmesan, and parsley. Stir until well mixed and the butter is melted. When the shrimp are cooked, add lemon juice, mix once more, then serve while hot.

    Do Italians put cheese on Shrimp pasta?

    Traditionally, Italians do not put cheese on shrimp pasta. It is considered a culinary faux pas in Italian cuisine to mix seafood with cheese. However, some Italian-American recipes may include cheese as a topping. Ultimately, it is up to personal preference.

    How do I store leftovers? 

    Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic,  whatever!  Make sure to store any leftovers in an airtight container.
