    Peanut Butter Apple Nachos

    If you’re looking for a fun way to eat an apple this is it! These apple slices have melted peanut butter on them and chocolate chips. An easy and healthy yummy snack for everyone.

    Why You Will Love This Recipe for Apple Nachos

    You don’t have to wait until Fall to eat apples this way!  Apple “nachos” are a great way to keep your blood sugar levels low with the help of some melted peanut butter on top of them.

    Peanut butter is a healthy fat and also includes some protein in it. Peanut butter is not the greatest source of protein but 2 tablespoons contain 8 grams. 

     The dieticians I follow all say that eating a carb with protein and fat will help with that so everytime I eat an apple or a banana I will have peanut butter with it. It’s so good!

    What Ingredients do I need for Apple Nachos?

    In this section, you can find substitutes or suggestions for certain ingredients. I also will try and list out what the ingredients' purpose is for. 

    • Apples - use green or red 
    • Dark, Semi Sweet, Chocolate Chips, or Sugar free chocolate chips if you're on a specific diet
    • Peanut Butter - my favorite is the Kirland, can also sub PB2 (Which is a powdered protein powder)
    • Toppings for Apple Nachos - Granola, Crushed Oreos, Chopped nuts, different colored sprinkles, or your favorite crushed up candy bar. Reese’s peanut butter cups would be awesome. 
    • Walnuts - or any type of crushed up nuts 
    • Coconut Flakes

    Chopped bacon for something savory!

    Caramel Sauce if you don't like peanut butter

    How to make Apple Nachos

    Step 1 Thinly slice the apples into rings with a mandoline slicer or a sharp knife. On a slicer with 3 thickness settings, use the thickest.

    Step 2 In a microwave-safe bowl, melt the peanut butter in 10-15 second intervals on the microwave’s lowest setting, being careful not to burn the chips. Stir in between intervals until melted (overheating peanut butter will result in a lumpy and gritty texture).

    Step 3 Drizzle the peanut butter with a spoon over the apple slices.

    Step 4 Garnish with mini chocolate chips (optional)

    Recipe Tips

    1. If using PB2 Powder mix 2 tablespoons of powder together in a bowl and gradually mix in the water to your desired consistency. Start off with 2 tablespoons of water. May or may not need to add more
    2. If you want to add any extra toppings sprinkle them over the nachos.

    Ingredients

    Scale
    • 1 medium apple
    • 1 lemon 
    • 2 tablespoons dark chocolate chips
    • 2 tablespoons creamy Peanut Butter
    • 1 tablespoon raw, unsalted peanuts, coarsely chopped (optional) 

    Instructions

    Step 1 Thinly slice the apples into rings with a mandoline slicer or a sharp knife. On a slicer with 3 thickness settings, use the thickest.
