It’s Friday and do you know what Fridays are for? Drinking! Memorial Day weekend is finally here and tomorrow I am going to the lake cabin after my Mom gets off work. Hopefully, it doesn’t rain. Tonight, I’m going to make a Red, White, and Blue Cake to bring there and I hope everyone has a fun weekend.
I blame my brother for getting me addicted to this drink. The last 3 times I’ve been over to his place, he’s always asked me if I wanted a drink and he will give me a Moscow Mule. After trying it, I loved it. The ginger with the lime is nice and refreshing and perfect for a Summer cocktail. A Moscow Mule is served in a copper glass and it has ginger beer, vodka, and lime. The glass is what makes it fancy. Since it’s copper, the glasses are kind of expensive. They run about 20.00 a piece at Pier 1 Imports. I think they’re worth it though. You could always serve the drink in another type of glass but it just wouldn’t be the same.
To make this drink WW friendly look for Ginger Beer that says diet on them. Some brands that are zero are Gosling’s Diet Ginger Beer. Can be found at Wal-Mart. If you can’t find Diet Ginger Beer use Ginger Ale. 3 oz of that is 2 smart points.

Fill a copper mug or rocks glass with ice; pour in vodka, lime juice and ginger beer (add the squeezed lime half if desired).Print

- 1 juice of half of lime
- ice and lime wedge
