    Weight Watchers Slow Cooker Taco Soup (Low Sodium)

    This Slow Cooker Taco Soup would be perfect to serve on Game Day and no one will no that it's Weight Watchers! Just make a big pot of it in your slow cooker and have a topping bar with sour cream, cheese, avocado, chips, or whatever else your favorite toppings for tacos might be. 

    Nobody will no this soup is also Weight Watcher friendly!

    Sunday mornings have become my time during the week, where I prep all my food for the week. This week, I made Egg and Sausage muffins for breakfast and this taco soup to take for lunch.  I'll stick the egg muffins in the fridge and place two in little baggies, so all I have to do at work is heat them up in the microwave. Same with the soup.

    Why You Will Love This Recipe

    If you have high blood pressure and want to lower the sodium content try this. Use a Salt Free or Low Sodium Ranch Seasoning Mix and Taco Seasoning.

    🌟 Recipe Tip: When you're at the grocery store look for canned foods that say low sodium on them. There are low sodium taco seasoning packets out there as well. This will help save on the salt content tremendously!

    🌟 Recipe Tip: Make my own recipe for Low Sodium Taco Seasoning at home.

    • Ground beef 96/4 or lean ground turkey - Lean ground beef is considered better than higher fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues. Additionally, it tends to have fewer calories per serving, making it a good option for those watching their weight. The 96% lean ground beef from Aldi is my favorite.
    • Onions - diced yellow onions
    • Low Sodium Ranch Dressing Mix  - such as Mrs. Dash
    • Low Sodium Taco Seasoning - Is a blend of spices used to flavor ground beef or other meats for use in tacos. It typically includes a combination of chili powder, cumin, garlic powder, onion powder, paprika, and sometimes salt and pepper
    • Low Sodium Chicken Broth - Some brands make no salt added chicken broth, extra bonus if you can find that.
    • Tomato Sauce -Is a pantry staple in many kitchens and adds a delicious burst of flavor to any meal.
    • Diced Tomatoes with Chiles
    • Black Beans, drained
    • Corn, drained - can be frozen or canned
    • Extra Toppings: Tortilla chips, sour cream, and cheddar cheese

    How to make Taco Soup 

    Step 1: In a medium skillet cook the onions and ground beef over medium heat.  Drain any excess fat.

    Step 2: Add ground beef mixture and all other ingredients to the slow cooker. Cook on High for 4 hours or Low for 6 hours.

    Recipe Tips: Garnish with sour cream, cilantro, scallions, and cheddar cheese.

    If you can't find certain low sodium products that is ok. Just go with whatever you have. I shop at Aldi quite a bit and I think just subbing even a few ingredients with low sodium products will help the salt content in this soup.

    Instant Pot: Use the Saute feature to cook the onions and ground beef. Drain any fat.  Add the rest of the ingredients into the Instant Pot. Once that is done cooking switch to Pressure Cook mode and the time to 20 minutes. Let the pressure slowly release after it's done cooking. 

    Serving size: 1 cup.

    How do I store leftovers?

    Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic,  whatever!  Make sure to store any leftovers in an airtight container.

    Description

    Ingredients

    • 1b lean ground beef 96/4 or lean ground turkey
    • 1 medium Onion, diced
    • 1 1oz packet Low Sodium Ranch Dressing Mix  such as Mrs. Dash *see notes
    • 1 1oz packet Low Sodium Taco Seasoning such as Mrs. Dash *see notes
    • 1 32 oz. box (low sodium) Swanson Chicken Broth
    • 14.5 oz. can Tomato Sauce (low sodium)
    • 2 - 14.5 oz cans Diced Tomatoes with Chiles
    • 14.5 oz can Black Beans, drained (low sodium)
    • 1 can Corn, drained (low sodium)
    • Tortilla chips and added cheese for toppings - extra points


    Instructions

      I am not sure, I've never tried using fresh beans for this. Sorry.

      Jenna,

      I rarely use canned beans or vegetables, because of the salt content and also the cost. I can do my own beans at about 12 cents per cup if I don't use stock to make them in. The corn is generally frozen. Do you think if I just add a bit more stock instead of having the liquid from the canned ingredients it would be okay, or do they help thicken the soup?

      I made this soup last night and measured out 1 1/2 cups per person. How in the world did you come up with 12 servings? I only got 5 bowls that we 1 1/2 cup each.

      rather than biy organic black beans Goya now makes low sodium products. It is something they have been doing for almost a year now. I think they would be less expensive than organic.I have never seen Mrs. Dash seasoning packets for tacos or ranch dressing. I will have to look for that as I too am restricted with sodium intake.
