If you’ve never made patty melts on the Blackstone, you’re seriously missing out. They’re crispy, buttery, cheesy, and way easier to make at home than you’d think.

This is one of my go-to meals when I want something quick, filling, and budget-friendly. You only need a few simple ingredients (all easy to grab at Aldi), and the Blackstone gives you that perfect golden crust you just can’t get the same way on a regular pan.

How to Make Blackstone Patty Melts
Step 1 Preheat your Blackstone griddle to medium-high heat.

Step 2 Add a bit more butter to the griddle, and toss in the sliced onions. Cook them slowly, stirring occasionally, until they become golden brown and soft. This process can take about 10-15 minutes but is crucial for adding that sweet, rich flavor to your patty melt. Once the onions are caramelized, remove them from the griddle and set them aside.

Step 3 While the onions are half way done cooking, place the patties on the other side of the griddle and cook for about 3-4 minutes on each side. Remove the patties from the griddle and set them aside.

Step 4 Butter one side of each slice of bread. On the unbuttered side, place a slice of Swiss cheese, followed by a beef patty, a generous helping of caramelized onions, and another slice of Swiss cheese. Top with the second slice of bread, buttered side facing out.
Place the assembled sandwiches on the griddle and cook until the bread is golden brown and crispy, and the cheese is melted, about 3-4 minutes per side.
What Temperature to Use on the Blackstone
Cook patty melts on medium heat (around 350–375°F).
This helps:
- cook the patties evenly
- melt the cheese
- get that crispy golden bread without burning
How to Get the Perfect Crispy Bread
- Use softened butter on the outside of the bread
- Don’t rush it—let it get golden before flipping
- Press lightly with a spatula for even contact
Variations to Try for Patty Melts
- Classic diner style – add Thousand Island dressing
- Cheesy melt – use multiple cheeses
- Spicy version – add jalapeños or spicy sauce
- Low-carb option – skip the bread and serve as a bowl
