I've had a Buffalo-style chicken pizza on this blog before, but it wasn't really Weight Watcher friendly. When using a Boboli Whole Wheat Pizza crust, you can have buffalo chicken pizza at home for only 5 points a slice!
Maybe make sure to have a light lunch that day, cause you're going to want to have at least 3 slices of this pizza when you get home from work. Speaking of work, the pizza is even better the next day for leftovers. If you like your pizza REALLY hot, you can use the extra hot Buffalo sauce.
What Ingredients do I need?
- Franks Red Hot Wings Sauce, Buffalo - or any brand of Buffalo Wing Sauce
- Cooked chicken or rotisserie chicken - I like to use the shredded Rotisserie Chicken from Target's Good and Gather Line
- Reduced-fat shredded Monterey Jack cheese
- Drained canned pineapple chunks in juice - I love pineapple on pizza, especially on top of this buffalo chicken pizza. There's some heat in the buffalo wing sauce and the pineapples help to balance that out. Pineapple on top of pizza is kind of a controversial thing and if you don't like it just leave it off. You can also add toppings like chopped celery or crumbled blue cheese.
- Plain fat free Greek yogurt - The Greek yogurt and self rising crust is always optional to make. You can get a store bought pizza dough or already made pizza crust at the store if you're super lazy like I am.
- White self-rising flour
- Fat-free ranch salad dressing - Instead of traditional red pizza sauce this pizza uses Ranch Dressing.
- Uncooked scallion(s) - or cilantro for additional toppings.
How to make Buffalo Chicken Pizza

Step 1: Preheat oven to 400 degrees.
Step 2: In a small bowl combine the Greek yogurt and flour together until well combined.

Step 3: Add the dough to a floured work surface and roll out into a pizza crust. The dough might be sticky.

Spread the buffalo wing sauce on top of the pizza dough. Add chicken and cheese on top.

Recipe Tip: If you aren't using a homemade dough, just place all the toppings on top of the pizza.
Step 5: Bake at 400 for 15 minutes.
Step 6: Take the pizza out of the oven and top with pineapple, diced green onion, and drizzle with ranch dressing.
Pro Tips for Buffalo Chicken Pizza
- Use a low-point or light pizza crust to keep the Points lower while still getting a crispy, satisfying base.
- Pat the buffalo chicken dry before adding it to the pizza. This helps prevent the crust from becoming soggy.
- For the best flavor, use your favorite buffalo sauce and adjust the amount to your preferred level of heat.
- A sprinkle of reduced-fat mozzarella gives you plenty of cheesy flavor without adding as many Points as regular cheese.
- Let the pizza rest for a couple of minutes before slicing so the cheese can set slightly and the toppings stay in place.

Serve this WW Buffalo Chicken Pizza with a simple side salad or some crunchy vegetables like celery, carrots, or cucumber. The cool, crisp vegetables pair especially well with the spicy buffalo chicken.

Storage and Freezing
