Blackstone steak bites are an easy dinner recipe that are also high in protein your whole family is going to love. These steak bites have 39 grams of protein for just 1 serving. I love cooking steak this way cause you can see if the steak is easily cooked if they are bite size pieces.

    Why Make This Recipe?

I started using my 36" Blackstone griddle for quick meal prep when cooking indoors felt like a choreโ€”especially during summer I hate turning on my oven. Now, itโ€™s my go-to tool for simple things like Scrambled Eggs on Blackstone Griddle or Blackstone Blueberry Pancakes.

Iโ€™ve made these steak bites countless times on my Blackstone a long with these Steak on Blackstone Griddle (How To) and they come out perfect every time.

Essential Blackstone Tools & Griddle Equipment

To get that perfect sear and keep your griddle in top shape, you need a few specialized items. Don't settle for standard kitchen spatulas; the heat of the Blackstone requires "heavy-duty" gear.

    • Long Stainless Steel Spatulas: You need at least two. These allow you to "toss" food like a hibachi chef and flip large stacks of pancakes or multiple burger patties at once.
    • Heavy-Duty Griddle Scraper: This is your most important cleaning tool. Itโ€™s used to push grease and food debris into the trap while the griddle is still hot, keeping your surface smooth.
    • Squeeze Bottles (Oil & Water): Keep one filled with oil (like avocado or canola) for cooking and one with water. Squirt water on a hot griddle to create steam, which helps loosen stuck-on bits or melts cheese under a dome.

    Ingredients Needed

    • 1 pound of sirloin or ribeye steak
    • 2 tablespoons of olive oil
    • Salt to taste
    • Fresh parsley, chopped (for garnish)
    • Optional: Butter for extra flavor

How to Make Blackstone Steak Bites

Step 1 Prepare the Steak: Start by cutting the steak into bite-sized pieces, approximately 1 inch cubes. This allows for even cooking and ensures each piece has a perfect sear.

Step 2 Preheat the Blackstone Griddle: Preheat your Blackstone griddle to medium-high heat, around 400ยฐF (204ยฐC). Ensure it is fully heated before adding the steak to achieve a good sear.

Step 3 Cook the Steak Bites: Once the griddle is hot, drizzle a little olive oil on the surface to prevent sticking. Place the marinated steak bites on the griddle in a single layer, ensuring they are not overcrowded. Cook the steak bites for about 3-4 minutes on each side. You want a nice sear on the outside while keeping the inside juicy and tender. If you prefer your steak more well done, adjust the cooking time accordingly.

Pro Recipe Tipsย for Steak Bites

    • Donโ€™t overcrowd the griddleโ€”cook in batches for the best sear.
    • Use a meat thermometer for precision: 130ยฐF for medium-rare, 140ยฐF for medium.
    • Try different cuts like NY strip or tenderloin for a splurge.
    • Use light olive oil spray to save on WW points without sacrificing flavor.
    • Always store leftovers in clean airtight containers. The type of container doesnโ€™t really matter. Use zip lock, glass, plastic,  whatever!

What if I don't have a Blackstone Griddle? Any type of non stick skillet over a stove top will work just fine!
