
Chili Frito pie is layers of chili, cheese, and Frito corn chips. It can be made in a casserole dish or kind of like a walking taco.
One of my FAVORITE things to do is figure out how to make recipes more Weight Watcher friendly or lower in points so that you can still be able to enjoy all those yummy and trending recipes that you see floating around on Pinterest. Like this chili frito pie recipe. You might think how are Frito chips diet friendly? Well let me tell you, something friend. You can eat ANYTHING you want just as long as you stay within your calorie deficit or daily points. All the food police out there can go away because I know there will be some of them out there that say Chili Frito Pie isn't a diet-friendly recipe.
Weight Watchers Friendly Chili Frito Pie
- Use the recipe below for zero point chili filled with lots of great zero point and healthy options such as ground turkey, corn, and black beans.
- Frito chips come in smaller 1 oz serving portions. If you don't care to make this into a casserole dish scoop out chili on to chips and add some reduced-fat cheese or fat-free cheese on top. Total points would be 8. Chili is zero points so use as much as you like. 🙂
- I personally like the smaller size bags for portion control.

How to make Chili Frito Pie
Slow Cooker Method: If you are meal prepping this for dinner the next day, take about 10 minutes to brown the ground turkey. Throw all the ingredients in the slow cooker so when you come home all you have to do is throw the cheese on top of the chili and let it melt. Then scoop it into a bowl and throw on some Frito Chips. Cook on low for 8 hours This is great for GameDay or a Pot Luck.
Casserole Method:
- Heat a dutch oven over medium-high heat. Coat pan with cooking spray. Add turkey; cook 8 minutes or until browned, stirring to crumble. Stir in corn and black beans; cook 2 minutes. Stir in ¼ cup water and next 5 ingredients stirring until thick. ladle chili into bowls; top with
ciilantro and green onions if desired. - Preheat oven to 350 and lightly grease a
2 quart casserole - Layer ingredients in
casserole in this order: chili, cheese, and chips. - Bake until bubbly, 15-20 minutes.
- Go to confession and sin no more.

I don't like Turkey Chili!
If you aren't a fan of turkey chili I have a recipe on this blog that calls for ground beef chili but the points will be different. You just have to do the math and figure it out in the recipe builder. Ree's recipe has always been a favorite chili recipe of mine because I prefer my chili made with ground beef and a little number of beans.

There are THOUSANDS of chili recipes out there and these are just the two I prefer. When I'm counting my points I use the turkey chili, when I'm not following a diet regime I use Ree's recipe. Pretty much Chili Frito pie is chili, chips, and cheese. Nothing too fancy!

Ingredients
For the Chili:
- 1 pound of ground turkey (99% fat-free)
- 1 12 ounce package frozen seasoned corn and black beans, thawed
- ¼ cup water
- 1 tablespoon chili powder
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 28 ounce can low sodium diced tomatoes (I used crushed)
- 2 chipotle chiles, canned in adobo sauce, chopped
- 1 8 ounce bag of Fritos
- 2 cups shredded cheddar reduced fat or fat free
Instructions

Each recipe or food has a Smart Points value. This is calculated using calories, saturated fat, protein, and sugar. It is best to stay away from foods that are loaded with saturated fat and sugar on the plan because those foods are higher in points. When you register with Weight Watchers you are given a daily set of points to target based on your age, gender, height, and activity level. Think of it as an easier way to track your macros.
