Why You Will Like This Recipe
Have you ever had scotcheroos before? These kind of remind me of them but they are made with Cheerios instead of Rice Krispies. To make these more Weight Watcher friendly, I reduced the amount of sugar being used.
Whenever I bake, I like to use real sugar instead of substitutes. Once, I tried making peanut butter cookies with Stevia and those turned out really bad! Hope you enjoy!
Ingredients Needed
- Peanut butter - is a delicious spread that is made from ground peanuts. One of the key benefits of peanut butter is its high protein content. It is a great source of plant-based protein, making it an ideal choice for vegetarians and vegans
- Vanilla extract - As Ina Garten always says use a good pure vanilla extract. No imitation vanilla please! Vanilla extract is made by combing vodka and fresh vanilla beans to a glass jar. This has to sit for a couple of days for the vodka to smart smelling
- Peanuts - salted or unsaltedÂ
- Cheerios is a brand of breakfast cereal that has been enjoyed by families since it was first introd
- Regular Sugar - Or regular granulated sugar, I do not use sugar substitutes in any of my recipes but if you know the conversions feel free to do so
- Vanilla protein powder(optional)
- Mini chocolate chips (optional)

How to Make Peanut Butter Cheerio Bars
- IIn a medium saucepan mix together white sugar and light corn syrup. Bring to a boil. Add peanut butter, vanilla and protein powder. Mix until smooth.
- Place peanut butter Cheerios and peanuts in a large mixing bowl. Pour peanut butter mixture over Cheerios and peanuts. Stir until combined.
- Spread Cheerio mixture in a 9 x 13 inch pan that has been greased with non-stick cooking spray.
- Cut into 20 pieces. Serving Size: 1 bar
Peanut Butter Cheerio Bar Tips:
Add some parchment paper to the pan to help easily get the bars out of the pan. Or you can spray the pan with non stick cooking spray.
Melt the sugar, corn syrup, and peanut butter on low heat. If stove burner is on too high the recipe might not work out properly.
Can I use something else other than cheerios? Instead of Cheerios you can use cornflakes, Reese’s puffs, or Rice Crispy bars. These Cheerio bars kind of remind me of Scotcheroos which are made of Rice Krispies.

How do I store leftovers?
Always store leftovers in clean, food-grade containers. The type of container doesn’t really matter. Use zip lock, glass, plastic, whatever! Make sure to store any leftovers in an airtight container.

- 5 cups of Cheerios cereal or peanut butte r Cheerios
- ½ cup of white sugar
- ½ cup of corn syrup
- 1 scoop of vanilla protein powder(optional)
- 2 tablespoons of mini chocolate chips (optional)
Instructions

Based on others saying the end result was crumbly and fell apart, I took 1 cup of the Cheerios and sprinkled across the bottom of the cake pan and it seemed to help.
