I’m not going to lie. This Mexican Pizza is one of the most delicious things I’ve made in my air fryer in a LONG TIME.
Have you ever had the Mexican pizza from Taco Bell? They had it on their menu about 8 years ago and I’m not sure if it is still on there. It was two soft tortillas with beans and ground beef in the middle. The tortillas got grilled on each side and on the top was a layer of hot sauce, cheese, tomatoes, and green onions. It was SO good and it is SO easy to make at home. Very easy to adapt to make WW friendly.
Taco meat is something I like to make a whole batch of and keep it in the fridge to use for taco salad, nachos, or tacos throughout the week.

Why You Will Love This Mexican PIzza
Most of this stuff can be easily found in the authentic aisle at your grocery store. My store has refried beans, enchilada sauce, hot sauce, and tortillas all in one area. I'm an Aldi nerd.
What do I need to make Mexican Pizzas?
- La Banderita Tortillas have been my favorite low calorie tortilla. They are also low in points.
- Lean ground beef - This is considered better than higher-fat options for several reasons. First, it has less saturated fat, which can contribute to heart disease and other health issues. Additionally, it tends to have fewer calories per serving, making it a good option for those watching their weight. The 96% lean ground beef from Aldi is my favorite.
- Fat-Free Refried Beans - Refried beans are a popular Mexican dish made from cooked and mashed beans. The beans are typically pinto beans or black beans, and they are cooked with onions, garlic, and spices before they are mashed and fried in oil or lard.
- Taco seasoning - Is a blend of spices used to flavor ground beef or other meats for use in tacos. It typically includes a combination of chili powder, cumin, garlic powder, onion powder, paprika, and sometimes salt and pepper. It can be purchased pre-mixed, or made at home using individual spices. I usually buy the Lower Sodium Taco Seasoning packets.
- Enchilada Sauce - If you don’t like enchilada sauce, there are other sauce options for the top. Try your favorite hot sauce or your favorite salsa.
- Reduced-Fat Cheese has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
- Tomatoes and Scallions for garnish.

How to Air Fryer Mexican Pizzas
Step 1: Heat a large nonstick skillet over medium-high heat. Cook the ground beef until brown and no longer pink. Add taco seasoning packet and water to the pan. Stir and let simmer for 5 minutes.
Step 2: Spread ¼ cup of beans on to one tortilla. Evenly spread the taco seasoned ground beef on top of the refried beans and place the other tortilla on top to secure. Set your air fryer to 400 degrees.
Step 3: Carefully place the pizza in the air fryer basket and set the timer for 5 minutes. The top of the tortilla might fly around in the air fryer so make sure to put a wire rack on top of the tortilla to stop it from doing that.
Step 4: After the 5 minutes is up, open up the basket. Place the sauce on top of the tortilla and cheese and cook for 2 more minutes or until the cheese is melted.
Top with scallions and diced tomatoes.

- 1 pound 96% lean ground beef
- 1 15 oz can Fat-Free Refried Beans
- 1 oz low sodium Taco seasoning
- 2 tablespoons of hot Sauce or Enchilada Sauce
- ¼ cup Reduced-Fat Cheese

When I make these pizzas I don't use the whole entire pound for one pizza. There are 16 oz in a pound of ground beef so I will divide into 4 portions. There might be left over taco meat at the end. Since the recipe only yields 2. You can make more at a time if you wish.

How much of the ground beef do you use per pizza. The entire pound seems excessive. Am I missing something?
