Why You Will Love Frito Corn Salad
Saw this recipe being made quite few times this week on Tiktok so I thought I’d try it. This recipe is currently going viral but it has been around for quite some time so it’s nothing new.
It’s great to take to a BBQ or 4th of July party this Summer. Even though the 4th of July has passed there is still time to make this! I’d just add the Frito chips last and mix them in whenever dinner is being served.
I added some chopped fresh cilantro, and used ½ mayo and ½ Greek yogurt instead of the 1 cup of mayo the recipe calls for.
Ingredients Needed for Frito Corn Salad
- Cans whole kernel corn, drained - Canned corn Some people prefer fresh or frozen corn for its taste and texture. Use whatever you like.
- Grated cheddar cheese - I like to use Reduced-Fat Cheese because it has a lower calorie count and less saturated fat than regular cheese, but it may also have a different taste and texture. It also helps with keeping the calorie count pretty low for this recipe.
- Mayonnaise - I used ½ mayo and ½ cup Greek yogurt
- 1 cup green pepper, chopped - red or green peppers are fine
- 1⁄2 cup red onion, chopped - this is optional, I used fresh cilantro instead of red onion
- 1 (10 ½ ounce) bag coarsely crushed Fritos chili cheese corn chips
